What is JUN Culture?

JUN Tea Culture - Honey Culture

Many have heard about the benefits of Kombucha, but what about Jun Tea?

This traditional fermented tonic (tea) is made with green or white tea and raw honey. It touts the benefits of any other fermented beverage, being close in make up to kombucha tea. For those who enjoy a homemade kefir or kombucha this soft light tea may be a nice alternative for you.


JUN vs Kombucha

For those who love Kombucha you are likely asking the question, what’s the difference? Well let me tell you. There is a distinct flavour to kombucha, Traditional brewed with black teas and having a sour taste, whereas, Jun Honey culture uses lighter unfermented teas and has a much more delicate flavor and less sour taste. JUN is like a fresh honey mead, without the alcohol.

While the process is very similar between the two, Jun has a faster fermentation cycle than kombucha. Where a new culture (scoby) is pretty much guaranteed with kombucha, the new cultures with jun are much less of a certainly and may take longer to grow to a usable size.  JUN tea also requires a lower temperature for fermentation meaning JUN will be ideal for the cooler kitchens or in climates that has a harsher winter.
